A single ideal day on the coast, planned the way we would for ourselves
The hour-by-hour outline of a resort day we would sketch for ourselves on a Tuesday in late June. Adapt as you prefer.
07:00 · Quiet swim
Nobody else is in the water and towel service has not begun. A coffee cart sits by the gate with single-origin filter coffee, no menu and no line. That half hour is the finest stretch of the day.
08:30 · Terrace breakfast
Eggs cooked to order, pastries straight from the kitchen oven, a modest plate of seasonal fruit. We skip breakfast buffets. We prefer plates brought by waiters who have looked after the same families for ten years.
10:00 · Spa or sea
Either choice works. The spa hammam feels bright and still in the morning. The sea is gentlest before midday. Most guests pick one and wish they had done both; a few manage both.
13:30 · Long lunch
Three hours at the lagoon bistro, a bottle of light white and grilled fish you did not realise you wanted. No phones, no hurry. This is the meal that stays with you.
18:00 · Golden hour terrace
Aperitif on the upper deck. By day two the bar team will know your name. The house negroni rests on a vermouth we produce on-site; it is the most unexpected pour on the estate.
21:00 · Tasting menu
Eight courses, two hours, one wine pairing. Years of work went into this evening. We hope the journey feels justified.
23:30 · A short hour at the table
Or a slow walk back to the suite. Either way: tomorrow opens at 07:00 with a swim, and the rhythm is the whole idea.
